The corn cob stock, similar to what one makes for corn chowder, is so versatile. I use it as/with soup stocks, for cooking rice, making polenta, and whatever inspires me.
The dry sweet corn is rehydrated and used, well, like sweet corn - in main dishes, sides, soups, breads.
